Today was an amazing day with my little one! We have been so excited about making this dish! Ratatouille is one of our favorite movies to watch together and I love that he was just as pumped as I was to make this! Ratatouille
1 small eggplant
1 yellow squash
1 zucchini
3 Roma tomatoes
1 15 oz. can diced tomatoes
1 15 oz. can of tomato sauce
1 medium onion, diced small
1 yellow bell pepper, dice small
3-4 TBLS butter
Dried thyme
Salt & pepper
Minced garlic
Dried basil
Fresh whole chives
1/4 tsp sugar, optional
Oil
Start by slicing your eggplant, zucchini, squash, and tomatoes. I bought a mandolin specifically for this dish, I got it at Walmart for like $12 and I highly recommend getting one! I used the thin slice setting so they were all very thin. If you don't have a mandolin, just make sure you slice them very, very thin and try to get them all the same thickness. Slice them all and put them on a tray or baking pan. Dice your onions and yellow pepper.
Add some oil to a skillet and sauté you onions and peppers on medium heat for a few minutes to soften. After your veggies are softened add a tablespoon of minced garlic and cook for a minute or so. Add in your tomato sauce and your diced tomatoes. Stir and simmer this mixture and add salt, pepper, thyme, and a little basil. Adjust the seasonings to your liking. I added like a 1/4 tsp of sugar just to cut the acidity a bit. Using a spoon or a masher, mash the diced tomatoes roughly. Simmer for awhile to blend the flavors and then remove from heat.
Preheat your oven to 350 and grab yourself a round casserole dish or pie plate, or an oval one, and start your assembly process. Add a decent amount of your tomato mixture to the bottom and then begin layering your veggies. I took one of each vegetable and layered all four and then carefully placed them in the pan and just repeated this process, going around in a spiral and making it look pretty. Once you have assembled your veggies in your dish, melt your butter and season with salt, pepper, and some thyme. Brush over the top and top with some parchment paper the size of your dish, so it sits atop the vegetables.
Bake for 30 minutes and then remove the parchment paper and bake for another 10 or so minutes. Once the veggies are nice and soft and the dish is bubbling, it's done! Allow to cool slightly and the arrange beautifully on a plate just like Remy did in Ratatouille! Make some swirls of sauce around your ratatouille and top with a chive garnish! Voila! A simple and easy, inexpensive dish! I hope you enjoy this as much as we did! Happy Disney cooking!
