Tuscan Mac and Cheese


This stuff is seriously so good! Spinach, sundried tomatoes, chicken, plenty of spices, and so much yummy cheese!! Here is the recipe below!



Tuscan Mac and Cheese


2-3 Boneless skinless chicken breasts

Oil

Salt & pepper

Paprika

Parsley

1 lb of elbow macaroni

1 medium onion, diced

1 heaping TBLS of flour

2 TBLS Minced garlic

1 jar of Sun Dried Tomatoes in oil, chop up tomatoes and reserve the oil

1 bag of fresh spinach, stems removed and large pieces tear into smaller ones

½ tsp of dried Basil

½ tsp dried Oregano

½ tsp Granulated Garlic

¼ tsp cayenne

2 cups of shredded Mozzarella

¾ cup grated Gruyere

¾ cup grated Parmesan

2 ½- 3 cups of Heavy cream

½ cup of milk


Take your chicken breasts, cover with plastic wrap and use a meat mallet or a heavy pan or a rolling pin and flatten out so they are thinner and will cook faster. Drizzle with oil and season both sides with salt, pepper, paprika, & parsley. Heat 1-2 TBLS of oil in a large skillet over medium high heat and cook the chicken breasts, a few minutes on each side, until cooked through. Remove the chicken from the skillet and cover and keep warm. Add 2 TBLS of butter to the skillet and some of the oil from the sundried tomatoes. Add the onions and sauté. After the onions have softened slightly, add the minced garlic and cook until the onions are soft. Whisk in a heaping TBLS of flour and cook for a minute. Slowly add in the cream while whisking so you don’t have any lumps. Add in your salt, pepper, basil, oregano, granulated garlic, and cayenne. I always add extra seasoning, but start out with those measurements and then go from there. I just prefer a lot of seasoning/spice. Cook on a medium low heat for a few minutes, being careful not to boil. Add in your cheese and continue to stir/whisk. Take your chicken breasts and cut into small-ish slices. Add in your noodles, sun dried tomatoes, and most of your spinach . Continue to stir and cook over low heat until the spinach is softened and the macaroni is creamy and everything comes together. Add in your chicken and stir to combine. Add any additional spices that you need and if the macaroni and cheese comes out too thick, you can add more cream or milk.




Start out with your chicken. Give it plenty of seasoning and fry it up. I had thin sliced chicken breasts and it was a pack of four, so I just used those.





Once the chicken is done, remove and start with your onions. Add in your garlic when they're almost finished and cook another minute or so and then you can add in your flour... Should look something like this.





Add in your milk and cream and your spices and whisk that mixture and warm through.




Add in your tasty cheese and whisk to combine until all melty and delicious.






Then go in with your remaining ingredients, spinach, sun dried tomatoes, etc. and stir to combine.




Add in your yummy, sliced chicken and combine.







Add any additional spices needed or milk if it turned out too thick and enjoy this deliciousness!!
