Ultimate Chocolate Chip Cookies

These cookies have quickly become my new favorite! And while I have many different versions of a chocolate chip cookie, these are the ultimate!







Here's the recipe!




Ultimate Chocolate Chips Cookies

2 sticks butter

1 ½ cups brown sugar, light or dark

¾ cup sugar

1 tsp espresso powder

½ tsp baking soda

1 tsp salt

2 eggs, room temp

1 tsp Vanilla Bean Paste

2 ½ cups flour

1 bar Ghirardelli Intense Dark 86% cacao Midnight Reverie 3.17 oz

1 bar Ghirardelli 60% Bittersweet Chocolate 4 oz

¾-1 cup Heath Milk Chocolate Baking Chips

Flaky sea salt, optional

Brown your butter in a skillet over medium heat. Pour into a heatproof bowl to cool slightly.

In a large mixing bowl mix together your sugars, espresso powder, baking soda, and salt. Add in your slightly cooled brown butter and mix to combine. Add in your eggs and mix. Stir in your vanilla bean paste and mix again. Add your flour and then mix to combine.

Roughly chop your chocolate bars making sure to leave some larger chunks and add to your cookie dough with your heath bits. Mix the chocolate in, I usually do this with my hands. Shape the dough into large sized balls, 8-10 and chill in the fridge for a few hours or up to 2 days.


Bake at 350 for 16-20 minutes. You want to make sure that the cookies are still soft in the middle and are just baked as they will continue to bake on the pan.

If you’re using the flaky sea salt, top the cookies with the salt immediately when they come out of the oven.


The salt is a delicious addition, but I did not add them to the cookies pictured on this post...





Start by browning your butter. Cook over medium-low heat and it will bubble, don't worry, that's normal. Just don't scorch it, make sure you're stirring constantly.





When you're finished, should look like this. It will smell nutty and wonderful.






Then combine your sugars, baking soda, espresso powder, and salt.








After mixing in your butter, eggs, etc... Your mixture should look like this.





Then mix in your chocolate and roll into balls to chill





Bake 18-20 minutes. The edges should be browned and the inside will still be very soft. They will form up more while cooling. However, I cannot wait for these bad boys to cool. they get eaten warm and it's really the best time to eat them!!!! Enjoy!!!

I can personally attest to the Ultimate part of the name, these cookies are AMAZING! And while I can't eat a whole one without going into a diabetic coma, I do love them sooooooo much.
