Weekly Meal Prep

I spent this afternoon meal prepping with some healthy options for us this week. I’ve been making egg bites a lot lately and I really love them! I made 3 batches of egg bites, all different flavors. One bacon, one spinach, and the other was chicken sausage and sage. It all starts with this base recipe.



Egg Bite Recipe


9 eggs

1 cup cottage cheese

1 cup shredded cheese, your choice, I used an Italian blend

Salt & pepper

Garlic powder

Onion powder

Cooking spray



I use this silicone muffin tin listed below




Preheat your oven to 350 and set some water to boil. Crack your eggs into a bowl and season them and whisk with a fork to break up your yolks. Add them to your stand mixer. Add in the shredded cheese and cottage cheese and mix with your whisk attachment for a few minutes. You can also add this to a blender and blend until smooth, but I’ve found this step unnecessary.


Set your muffin tin on a cookie sheet with sides and spray the bottom of each cup with some cooking spray. Pour in 1/4 cup of your mixture into each cup and evenly add in any leftover mixture among them. Add whatever toppings you choose on top and use a spoon to gently dunk them under the eggs so they're all covered.


Pour your boiling water onto the cookie sheet, about halfway up, and then carefully transfer you cookie sheet to the oven and cook for 25-35 minutes. Make sure the eggs are set, they will start to brown around the edges.


You can really play with these and add different cheeses, toppings, seasonings, mix eggs and egg whites, whatever you like!
